Tripe Washing is the process of properly cleaning the tripe/omasum with a hot water solution at exacting temperatures to produce a clean, fluffy texture.  The washing is actually done in a batch tank which looks like a industrial size washing machine. 

Differing tripe quality and color are dependent upon different market requirements, but the quality can be easily controlled during the washing process with accurate temperature control by utilizing the EZ Heater® or EZ Skid™ system. Temperature control is crucial because if it is not held constant, the yield and quality of the tripe will suffer and product will go to waste.
